A New Way to Eat. A decade ago, you'd be a pretty ballsy, accomplished dude if you knew how to put those cute little quadrillage char marks on your burgers. If you want to be happy, fulfilled, and at peace with your rumbling belly, you'd better bring your food game to a whole new level. Venture outside your comfort zone by traveling mouth first. You don't have to jump off mountains or dine with outlaws, although I enjoy both immensely. Try diving for octopus off the coast of Mexico and following your catch into a sleepy little beach town for dinner. You can eat your way through the night markets of Chengdu or dance the evening away at a lechonera in Cuba. Or just stay stateside and head south to taste your first meat-and-three.

In the kitchen, familiarize yourself with the great tradition of hunter-eater self-sufficiency. Modernist cuisine is great, but I don't own an immersion circulator. I do own a shotgun. And I know how to butcher a pig, catch a fish, and craft my own chow. You won't find inner bliss at the local mall "eatertain-ment" restaurant. You might find it while curing your own wild-boar bacon. Get the hint?

SIMPLIFY
Eating a balanced, whole-food diet of freshly cooked chow is good for you. You know it in your heart. Upping the ante and setting out to eat a little more sustainably (more fresh mackerel, less filet mignon) is better for our oceans and our farms. Spending money on fresh food created in your own community makes you a pioneering badass. You can change the world between breakfast and dinner. Really.
